Taco Pork Chops

The night that I made these, Jason asked what I was making and I replied “taco pork.”  He responds, “do you mean pork tacos?” but I say, “no, taco pork!”  These pork chops have a marinade made with taco seasoning, and they are yummy enough eat them by themselves, or if you prefer, in a tortilla.  I served them with an avocado lime salad, delicioso!

Serves 2-4
Prep time 5 minutes
Cook time 15 minutes
Total time 20 minutes

Ingredients

  • 3-4 6 ounce pork loin chops
  • 1 tablespoon vegetable or canola oil
  • 8oz tomato sauce
  • 1 cup water (divided)
  • 1/2 cup chopped onion
  • 1/4 cup taco seasoning (or 1 packet)
  • 1 tablespoon corn starch
  • salt & pepper to taste

Optional

  • 1/2+ teaspoon hot sauce

Directions

1. Preheat a large pan over medium-high heat. In a bowl, Mix tomato sauce, 3/4c water, onion, hot sauce and taco seasoning.
2. Season pork chops with salt and pepper, then add the oil to the pan, giving it a minute to heat up before adding the chops. Brown them for a minute on both sides (about 2 minutes per side) then reduce heat to medium.
3. Pour tomato mixture over the chops, then bring it to a boil. Reduce heat to medium-low, cover the pan and simmer for 4-6 minutes. Remove the pork and set it aside.
4. Turn heat back up to medium. Mix the corn starch and 1/4c water. Stir it into the pan with the tomato mixture. Bring to a simmer and cook two minutes or until sauce is thickened.
