Strawberry Oatmeal Pancakes

I was never really a fan of oatmeal until about a year ago when I realized how good it can be when you add the right mix-ins for awesome flavor/consistency.¬† Ever since, I’ve been kind of crazy about it and want to put it in everything. Not only do oats give baked goods a nice rich, hearty taste and texture but they are good for you and fill you up so that you aren’t starving an hour later.

This is a recipe for oatmeal pancakes with a light strawberry topping. You could replace the strawberries with blueberries, raspberries or even sliced peaches.

Strawberry Oatmeal Pancakes

Serves 6-10 pancakes
Prep time 20 minutes
Cook time 15 minutes
Total time 35 minutes

Ingredients

  • 1 cup quick cooking oats
  • 1 cup flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 1/2 cup milk
  • 1/4 teaspoon vanilla extract
  • 1/2 tablespoon butter

Optional

  • powdered sugar

strawberry topping

  • 1 tablespoon sugar
  • 2 tablespoons water
  • 1/2 teaspoon corn starch
  • 1 cup strawberries

Directions

Strawberry topping.
1. Chop strawberries. Mix water and Corn starch. Combine strawberries, sugar and starch mixture into small saucepan. Bring to simmer over medium-high heat. Simmer for about 10 minutes, stirring frequently, then remove from heat.
2. Mix all dry ingredients in a bowl. Add egg, vanilla and milk and stir until just mixed. Cover bowl with towel and let sit for at least 5 minutes.
3. Add butter to non-stick pan or skillet, preheat over medium heat. Swirl butter to distribute.
4. Pour batter to desired pancake size, flip cakes once they start to bubble. Serve with strawberry topping and powdered sugar if you wish.
