Strawberry French Toast

First off, sorry if you are seeing this for the second time. I had some server issues saturday night and lost this post, so now I’m reposting.

I am not a huge fan of french toast, because I don’t like the mushy texture french toast can have. However, this recipe uses some flour in with the egg mixture which I think helps negate some of that mushyness so you’re just left with a light, fluffy french toast. The strawberry compote is a perfect topping because it’s sweet but not too sweet.

You can use frozen or fresh strawberries to make the compote. I used frozen because that’s what I had available. it’s been brutally cold in Wisconsin the past few weeks so I haven’t been grocery shopping as often as I usually do!

Recipe adapted from All Recipe’s Fluffy French Toast

Strawberry French Toast

Serves 6 slices
Prep time 10 minutes
Cook time 18 minutes
Total time 28 minutes

Ingredients

  • 2/3 cups milk
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 3/4 tablespoons sugar
  • 3 tablespoons flour
  • 6 slices bread
  • 1/2 tablespoon butter
  • 2 eggs

  • 1 cup strawberries (fresh or frozen)
  • 1 tablespoon sugar
  • 1/4 teaspoon corn starch
  • 2 tablespoons water

Directions

1. Mix water and Corn starch to make a slurry. Combine strawberries, sugar and starch mixture into small saucepan. Bring to simmer over medium-high heat. Simmer for about 10 minutes, stirring frequently, then remove from heat.

2. Whisk together milk, salt, eggs, cinnamon, vanilla and sugar until its foamy. Whisk in flour until just blended (there will be small lumps).
3. Heat a pan or griddle over medium heat. Melt butter in pan. Soak slices of bread in the egg mixture until saturated, then cook on each side until golden brown.
4. Top warm french toast with strawberry compote.
