If you’d like a little kick of spice to wake you up in the morning but you don’t have much time to spend making a breakfast burrito or a more complicated dish, look no further than this cayenne peppered egg & cheese tostada.
Tostada is traditionally a toasted tortilla, but I used an english muffin instead. This recipe would go well with a toasted tortilla too if you prefer a more authentic tostada.
Nothing like a runny egg to combat the intensity of cayenne pepper, but If you’re worried about it being too spicy, just lightly dust the egg with one shake. Even if it ends up being milder than expected, a small amount of pepper will still give it a nice warm flavor.
