Grilled cheese has to be the first thing everyone learns to cook, right? I am a big fan of the classic grilled cheese with american slices, but I also like to experiment and try variations. One such experiment is this pizza grilled cheese with mozzarella, garlic salt, and some fried parmesan to top it off. It’s an easy way to make your own cheesy bread sticks!
The thing that makes this special, in my opinion, is the addition of grated parmesan on the outside of the sandwhich. You brown the grilled cheese first and add the parmesan as a final step, only cooking it a few seconds so it melts and gets a little scorched. Yes, some if it will probably stick to the pan and/or your spatula, but that’s okay. Perfection is not part of the process.
Pizza Grilled Cheese

- 6 slices of white bread
- ~3oz mozzarella (3 sandwhich slices)
- 3 tablespoons grated parmesan
- 2 teaspoons garlic salt
- 2 tablespoons margin or spreadable butter
- 1 cup marinara or pizza sauce
|1.||Preheat pan over medium heat. Butter one side of each slice of bread and lightly sprinkle with garlic salt. Heat pizza sauce in small sauce pan or in microwave.|
|2.||Add 3 slices butter side down to pan, put cheese over bread and then top with remaining slices (butter side up). Cook about 3 minutes or until golden brown, and flip, cook another 2-3 minutes.|
|3.||Once sandwhiches are browned, distribute half the parmeean over sandwhiches and flip them. Quickly add remaining parmesan to other side and flip again, allow them to cook for about 15 seconds before removing from heat.|
|4.||Slice sandwiches into dunkable strips or in traditional diagonals if you prefer. Serve with sauce on the side.|
