Peppercorn Beef Tenderloin

This recipe is adapted from one by the Pioneer Woman, Ree Drummond, and if there is one thing that Oklahomans know, it’s steak.  This combination of ingredients is very simple but very effective in making some super tasty steaks.  I’ve made this a few times now and even if you don’t cook the steak perfectly it still tastes amazing!

Check out my previous post for tips on how to make a perfect seared steak.  Why spend a ton of money on steak at a restaurant when you can make your own at home for less than half the cost?  Well, other than the fact that you can just sit and relax while someone else serves you.  I guess there is that. :)

Peppercorn Beef Tenderloin

Prep time 5 minutes
Cook time 10 minutes
Total time 15 minutes

Ingredients

  • 2 7-10 ounce beef tenderloin steaks
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 2 tablespoons whole peppercorns
  • 3 tablespoons butter
  • 2 cloves crushed garlic

Directions

1. Crush peppercorns by putting them in a bag then smashing them on a cutting board with a meat tenderizer. Melt butter (in a small pan or in microwave) and mix in garlic.
2. Heat a heavy bottomed skillet (seasoned cast iron works best) over medium-high heat.
3. Rub salt and sugar over both sides of the steaks. Add Peppercorns to one side of each steak.
4. Sear steaks in hot pan for 3-5 minutes on each side. (The time it takes depends on how thick the steak is and how well you like it done.)
5. Remove steak from the heat. Pour garlic butter over steaks. Allow them to rest 10 minutes before serving.
