At our house, weekends are all about breakfast. I love breakfast foods but I also love sleeping in until the last possible second so on the weekdays I usually end up eating instant oatmeal. Consequently, I tend to get pretty excited on saturday morning and end up putting on a big production. The only problem with this is that suddenly you’re stuck with a big pile of dishes and the day has barely begun. That is why I like recipes such as this where you can have all the goodness of a big breakfast (eggs, bacon, veggies) and when it’s over, you only have to clean one pan.
You may be thinking – if everything is cooked in the same pan, does that mean everything is cooked in bacon grease? Well, yes, but only a small amount. What I do is, cook the bacon first, drain the pan, then deglaze it, the same way you would if you were making gravy. I also use a good non-stick pan so not much extra fat or oil is necessary to prevent the food from sticking.
How to deglaze a pan:
1. Cook the bacon and remove it from the pan. Drain as much of the grease as possible in a heat safe container.
2. Remove the pan from the heat and very carefully, add about 2 tablespoons of water. It will spatter so don’t hover over the pan.
3. Once the oil stops spattering, use a wooden or hard plastic spatula to scrape the char off the pan. Discard the residue and leftover water.
That’s it! At this point you have the choice of either adding a little of the bacon grease back into the pan, or just adding the eggs in as is. I did not add additional grease – If you’re using a nonstick pan, there should be enough grease residue left in the pan so that the eggs don’t stick.
Brimley wants a breakfast quesadilla. Don’t worry, I didn’t give him one! It sure is hard to say no that face though.
One Pan Breakfast Quesadillas

- 4 eggs (whisked until foamy)
- 4-6 slices bacon
- 2 medium to large tortillas
- 1/2 cup shredded cheese
- chopped veggies of your choice (tomato, onion, peppers, avocado)
|1.||Cook bacon in a nonstick pan over medium heat until crispy then set to drain on papertowel lined plate.|
|2.||Pour bacon grease in a heat safe container. Deglaze the pan* very carefully with about 2 tablespoons of water then discard pieces of charred bacon.|
|3.||Add the whisked eggs to the pan. While the eggs cook, layer one tortilla with half of cheese, veggies and bacon. When the eggs are cooked to your liking, top tortilla with eggs, remaining cheese and the other tortilla.|
|4.||Carefully place quesadilla in pan and cook 2-3 minutes until cheese melts and the bottom has browned. Flip tortilla and cook another 2 minutes.|
