Noodles and Company style Mac n’ Cheese

This is a super quick and easy way to make tasty mac n’ cheese. It’s served the same way as you get it at Noodles and Company where the sauce and grated cheese aren’t mixed until you sit down to eat it; it tastes similar too.

Some macaroni and cheese recipes call for you to make a roux to thicken the sauce, but I don’t think that’s necessary.  I say, skip the roux! That’s right, roux is a ruse. :P

Noodles and Company style Mac n’ Cheese

Serves 4
Prep time 5 minutes
Cook time 15 minutes
Total time 20 minutes
Macaroni and cheese prepared and similar in taste to noodles & company, only 15 minutes to make.

Ingredients

  • 2 cups macaroni noodles
  • 1 tablespoon flour
  • 1 cup whole or 2% milk
  • 1/2 cup shredded cheddar cheese
  • 2 cups shredded monterey jack cheese
  • 1/2 teaspoon paprika (aka a couple of shakes)
  • salt & pepper to taste

Directions

1. Boil noodles until al dente. Drain and set aside.
2. Pour half the milk in a sauce pan and slowly heat it up over medium heat. Stir remaining milk and flower until blended. Once the milk in the pan starts steaming, pour mixture in with heated milk while stirring. Add 1.5 cups of the monterey jack cheese while stirring. Add Paprika. Stir until cheese is melted. Remove from heat.
3. Transfer macaroni to serving dishes and pour cheese over noodles. Add remaining monterey jack cheese and cheddar cheese to top of dish. Add salt and pepper if you like. Serve and stir before eating.
