Here is what I would call an “unrecipe” because it’s more of an idea than a specific recipe to follow. I saw the idea for individual seven layer dip over at the Recipe Critic and I decided to try it out for myself as a lighter spin on taco night. While I love a good grilled burrito, these mini layered bowls aren’t only pretty but also tortillaless and consequently have fewer empty calories, especially if you don’t eat them with chips. (I had a few chips, I’m not that well behaved).
You could easily serve these in short cups as a party appetizer as the Recipe Critic did, or as I did in small bowls for lunch or a light dinner for yourself.
Use whatever your favorite taco ingredients are, just be sure to put a barrier of cheese or salsa between hot items (beans, meat) and cold items (sour cream). My taco bowl had the following layers from top to bottom:
- Sour cream
- Shredded Cheddar cheese
- Seasoned Turkey burger
- Refried Beans
- Cilantro lime rice
Yum! Cilantro lime rice is delicious and it also adds substance to this dish to make it more than a dip if you aren’t eating it with chips.
