I wanted to try out a microwave baked cookie or a “mug cookie”, so I found this recipe at Sweetest Kitchen . The result wasn’t really as dense/chewy as a cookie, but much denser than a cake – so I’m going to call it a brownie. No matter what you call it, you can also call it yummy!
As you can see from the photo, the outer edges of the brownie are still a little wet. The author of the original recipe recommended to err on the side of undercooked, because an overcooked brownie will get tough pretty quickly. I kind of liked my cookies a little bit on the soft side anyways!
This would be really good with ice cream, but sadly I didn’t have any.
microwave baked chocolate chip brownie
|Prep time||5 minutes|
- 1 tablespoon melted butter
- 2 tablespoons brown sugar
- 1/8 teaspoon vanilla extract
- pinch of salt
- 1 egg yolk
- 3-4 tablespoons flour
- 1-2 tablespoon chocolate chips
|1.||In a small mug or ramekin, mix the butter, sugar, vanilla and salt. Add the egg yolk and stir well then add 3 tablespoons of flour and stir until just combined. If it is not thick / similar in consistency to regular dough, add another teaspoon of flour. Finally, fold in chocolate chips.|
|2.||Microwave at 70% power for 30 seconds. If it is still very wet on top, microwave for another 10 seconds. It is better if it is a little undercooked than overcooked as it will become tough.|
