Lemon Parmesan Pasta

This is my new favorite pasta. It’s very simple but the combination of flavors – parmesan, fresh lemon juice / lemon zest, plus roasted tomato and onion is amazing. It makes my taste buds so happy. Not only that but this pasta is relatively healthy especially if you use whole grain spaghetti.

You could easily customize this recipe by switching out the tomato and/or onion with whatever veggies you have or prefer.  Asparagus or summer squash would also be good options.  You could also omit the roasted vegetables all together, especially if you’re eating the pasta as a side, say with chicken or fish.

Ingredients

  • 1/3 - 1/2lb spaghetti
  • 1/2 large lemon
  • 1 cup grated parmesan
  • 3 tablespoons olive oil
  • 1 teaspoon dried basil (or handful of fresh basil)
  • salt & pepper to taste
  • 1/2 red onion (sliced)
  • 12-15 cherry or grape tomatoes

Directions

1. Preheat oven to 425°f
2. Cover baking pan in tin foil, arrange the tomatoes and onion in single layer and brush or drizzle lightly with 1 tablespoon of olive oil and dust with salt and pepper. Bake for 15 minutes.
3. While veggies are cooking, bring water to boil and cook pasta according to package directions.
4. While pasta boils / veggies cook, zest lemon into a mixing bowl. When done zesting, squeeze juice from lemon into bowl. Add parmesan, olive oil, basil, salt & pepper, and mix to form a paste.
5. Drain pasta but leave about 2 tablespoons of pasta water and add to lemon paste. Return pasta to pan and mix with lemon paste. Top off with roasted veggies and add additional parmesan / pepper if desired.
