Light Lemon Mug Cake with Lemon Glaze

I love the combination of tart and sweet, so this lemon mug cake really hits the spot.  Both the cake and glaze are super easy to make and taste wonderful.  The cake is light and airy, lemony  but not too much.  Simple, yes.  Delicious, double yes.



You don’t have to use fresh squeezed lemon juice or lemon zest if you only have the bottled version.  The bottled version contains ingredients other than lemon juice but its difficult to tell the difference when used in small quantities for baking purposes.  The zest is more of a garnish in this case too.


Lemon Mug Cake

  • 3 tablespoons flour
  • 1/4 teaspoon baking powder
  • 2 tablespoons sugar
  • 2 tablespoons milk
  • 2 teaspoons vegetable oil
  • 1 tablespoon lemon juice
  • lemon zest


  • 3 tablespoons powdered sugar
  • 2 teaspoons lemon juice


1. Mix dry cake ingredients thoroughly (except for zest). Add wet ingredients, mix. Microwave for 50-70 seconds.
2. Mix glaze ingredients. Top cake with glaze and lemon zest. Enjoy!
