These tasty lemon pancakes have greek yogurt in the pancake batter and in the vanilla sauce. Add a little extra protein to your pancakes!
These pancakes would also be good with traditional maple syrup.
If you have vanilla yogurt instead of plain, you can skip the extra sugar in the pancake recipe, and skip the vanilla extract in the sauce as well as half the sugar. You want it to be sweeter than the original yogurt but not too sweet!

Lemon Greek Yogurt Pancakes with Vanilla Sauce
- 3/4 cups plain greek yogurt
- 1 egg
- 2 tablespoons lemon juice
- 1/2 cup flour
- 2 tablespoons sugar
- 1 teaspoon baking soda
- 1/3 cup plain greek yogurt
- 1/3 - 1/2 cup powdered sugar (taste test it and add more sugar if it isn't sweet enough for you)
- 1/2 teaspoon vanilla extract
|1.||Mix together egg and yogurt and lemon juice in one bowl, and the flour, sugar and baking soda in another bowl, then add the dry ingredients to the wet and mix until just combined.|
|2.||Preheat a greased pan or griddle over medium-low to medium heat. (These pancakes will burn over medium high heat because of the yogurt content)|
|3.||Mix together the sauce ingredients well and set aside until ready to use.|
|4.||Pour about 1/4 cup batter per pancake into pan. Cook for about 2 minutes until large bubbles start to pop up through the batter, then flip and cook until browned on the other side.|
|5.||Serve pancakes with topped vanilla sauce and some lemon zest.|
