Lemon Garlic Avocado Pasta with Grilled Chicken

I was this drawn to this idea of avocado pasta sauce because it creates a creamy base without dairy, and more importantly, I love avocado.  Also, the combination of lemon and garlic is divine.  Not only does this dish taste great but the roasted tomato, chopped garlic, basil and juicy lemon will make your kitchen smell amazing.


This recipe takes a little longer but about half the time is spent roasting the tomatoes and garlic in the oven, which gives the chicken time to marinade.

Lemon Garlic Avocado Pasta with Chicken

Serves 2-3
Prep time 15 minutes

  • 1lb chicken breasts or tenders
  • 6-8oz pasta (farfelle, penne, fusilli)
  • 5oz grape tomatoes
  • 1 tablespoon olive oil
  • salt & pepper to taste

chicken marinade

  • 1 tablespoon basil
  • 1/3 cup lemon juice
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)

avocado sauce

  • 3 cloves garlic (unpeeled)
  • 2 avocados
  • 3 tablespoons lemon juice
  • 2 teaspoons lemon zest


1. Preheat oven to 400°f
2. Mix chicken marinade ingredients. Add chicken to a zip bag and top with marinade, the seal and flip around several times to ensure coverage. Put in fridge.
3. Put tomatoes and remaining garlic in an oven safe dish, drizzle with olive oil, top with salt and pepper and bake for 20 minutes.
4. Separate garlic from tomatoes, cover tomatoes with towel to keep them warm. Boil noodles according to package directions. Preheat grill or grill pan. Once garlic is cool enough to touch, unpeel it and add it to a food processor along with other avocado sauce ingredients. Blend thoroughly.
5. Take chicken from fridge and grill until cooked through. Drain noodles then return to warm pot, add avocado sauce and mix. Divide noodles between serving dishes and top with tomatoes and chicken. Add parmesan and/or pepper if you wish!
