Garlic, Lemon & Spice Chicken

Garlic & lemon may be my favorite way to season chicken.¬† This recipe calls for pan frying the garlic in olive oil before adding the chicken, infusing the flavor in the oil. The chicken is then spiced as it cooks so that the spices don’t end up stuck to the bottom of the pan.¬† The result is a nice tender, juicy chicken breast with a crispy, deliciously seasoned outer layer.


The other nice thing about adding the spices in the pan is there is no need to marinade in advance, so if you’re like me and you don’t think about making dinner until, well, dinner time.. this is a great last minute dish.

Garlic, Lemon & Spice Chicken

Serves 2
Prep time 5 minutes
Cook time 20 minutes
Total time 25 minutes


  • 1lb boneless skinless chicken breasts (2 large breasts)
  • 1 lemon (juice and zest)
  • 5 cloves garlic
  • 1/4 cup olive oil
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon lemon pepper
  • 1/2 teaspoon dried oregano


1. Cut chicken in half lengthwise. Zest lemon and mince garlic.
2. Put oil in saute pan and heat over medium. Add garlic, cook for a minute
3. Add chicken. Once oil starts to bubble, season tops of chicken with a thin layer onion powder, garlic salt, lemon pepper and oregano. Cook for 3-4 minutes.
4. Flip chicken and add the same spices as listed in step 3 to other side. Cook for another 3-4 minutes.
5. Flip chicken a second time. Sprinkle breasts with half of lemon zest and half of the fresh lemon juice. Cook another 3-4 minutes.
6. Flip chicken for the third and final time, add the rest of the zest/juice. Cook about 4-6 more minutes or until chicken is no longer pink in the middle.
