Feel Good Beef & Broccoli

Here’s a low sodium, low sugars, high yum-factor beef & broccoli recipe.¬† I also steamed the broccoli instead of cooking it in the pan so that it doesn’t absorb as much oil and is a bit less mushy.

It does require a few uncommon ingredients including oyster sauce and mirin.  The good news is those things last a long time and are pretty inexpensive.

Total time 45 minutes

  • 0.75-1.0lb flank steak or sirloin (thinly sliced against the grain)
  • 4 cups broccoli florets
  • 1.5 tablespoons vegetable oil
  • 2 cloves garlic
  • 2 teaspoons corn starch (dissolved in 2 tablespoons water)
  • 1/3 cup sliced onions

  • 2 teaspoons low sodium soy sauce
  • 1 teaspoon mirin (or sherry)
  • 1/2 teaspoon corn starch

  • 1/4 cup oyster sauce
  • 2 teaspoons mirin (or sherry)
  • 2 tablespoons low sodium soy sauce
  • 1/2 cup low sodium beef broth

1. Put beef in a sealable bag. Stir marinade ingredients together and pour in marinade. Mix by fliping bag a few times then leave to marinate in fridge for at least half an hour.
2. Start cooking rice if you wish to eat with rice. Mix sauce ingredients together and set aside.
3. Steam broccoli. Once the broccoli is about 5-8 minutes away from being done, heat vegetable oil over high heat in wok or large saute pan.
4. Carefully add beef, garlic and onion to pan and cook without disturbing for about a minute. Then add sauce and bring to a boil. Once boiling, add corn starch and boil until sauce thickens, about 2 minutes.
5. Gently stir in steamed broccoli and turn off heat. Serve over rice or noodles.
