Easy Cheesy Chili & Macaroni

Before I decided to expand my cooking horizons, I made a lot of hamburger helper.  This dish is similar to hamburger helper in that it has noodles and meat, but it tastes a lot better – and it might be even easier to make.

This would be amazing with homemade chili but it’s also pretty good with your basic canned chili. If you use canned chili, you can add red pepper or other fresh ingredients/spices when you heat it up on the stove to enhance the flavor.

My favorite chili recipe is this turkey chili made with bloody mary mix – yum. It is kind of a cheater recipe because it uses tabasco chili starter, but who cares if it’s good!

Easy Cheesy Chili & Macaroni

Ingredients

  • 15oz your favorite chili
  • 1 cup macaroni noodles
  • 3/4 cups grated cheese (cheddar, manchego, monterey jack)
  • 3 stalks chopped green onion

Directions

1. Bring a medium pot of water to a boil. Put an oven rack in the center of the oven and preheat oven to 400°f,
2. Cook macaroni noodles to al dente according to package directions. While noodles are cooking, heat chili in a small saucepan on the stove over medium heat. Bring it to a boil, stir and turn off heat.
3. Drain the cooked noodles and put the in a 1.5 quart casserole dish. Add the chili and mix the two together then top with cheese.
4. Bake the casserole for 10 minutes, then switch over to the broiler and broil about 5 minutes until the cheese is bubbly and starts to brown. (Don't move the rack.) Remove casserole from oven and top with chopped green onion.
