Double Chocolate Cookies

What’s better than chocolate? Double chocolate, of course.  I was all out of chocolate (except for chips & cocoa), and these cookies definitely provided me with a chocolate fix. (Whew!) :)

These cookies are a little bit on the rich side, so a cold glass of milk is a good match.

Recipe adapted from Inspired Taste’s Chewy Double Chocolate Cookies

Double Chocolate Cookies

Serves 12-15 cookies
Prep time 15 minutes
Cook time 15 minutes
Total time 30 minutes

Ingredients

  • 6 tablespoons butter at room temp (or canola oil)
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cups + 2 tablespoons flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • pinch of salt
  • 3/4 cups chocolate chips (or broken up chocolate pieces)

Directions

1. Preheat oven to 350°f
2. Mix butter and sugars in a bowl well, then add egg and vanilla and mix again.
3. In a separate bowl, mix flour, cocoa, baking powder and salt well.
4. Add half of the dry ingredients to the wet and mix just until incorporated, and the 2nd half and mix until combined. Mix in chocolate chips.
5. Line a cookie sheet with parchment paper. Drop about 2 tablespoons worth of dough 2-3" apart on sheet. Bake 9-12 minutes then let sit on the baking sheet 5 minutes before removing.
