I decided to take a slight detour from traditional fall foods and cook up this hawaiian bbq chicken sandwich. It’s perfect for hectic weekdays because it’s just 3 ingredients to throw in the crock pot, then when the chicken is ready, grilling up the toppings only takes a few minutes. This sweet and tangy combination of ingredients is fool proof and satisfying.
It only takes 4 hours to cook, but if you will be gone all day and want to prepare it in the morning, it is fine if you have a crock pot with a timer. The warm setting won’t dry out the chicken too much. If you are worried about it drying out, add 1/4 cup chicken broth or water.
Crock Pot Hawaiian BBQ Chicken Sandwiches

- 1lb chicken
- 1 cup bbq sauce (8oz)
- 1/4 cup pineapple juice
- 4 pineapple rings
- 1/2 onion (chopped to 1/4-1/2 inch rings)
- 4 large buns or rolls
|1.||Place chicken, bbq sauce and pineapple juice in crock pot, cook on low for 4 hours.|
|2.||Shred chicken in sauce (shred in pot if possible or remove then put back in pot to mix). Grill pineapple and onion rings over medium high heat for 3-5 minutes on each side.|
|3.||Layer ingredients onto buns.|
