Cinnamon Roll Pancakes

It’s been a naughty food week for me. Cheeseburgers, fried onion rings, and now this! I blame the fact that it’s getting cold out and I want to eat some yummy comfort food.  These cinnamon roll pancakes are pretty naughty as they require the use of a fair amount of butter and sugar, but they are quite tasty and certainly will satisfy your sweet tooth.  They’re also kind of fun to make and much less labor intensive than homemade cinnamon rolls.

The time cooking estimate on the recipe assumes you did what I did and make one pancake at at time. I use a normal nonstick fry pan for making pancakes because I don’t have a cool electric griddle and I find that using the griddle pan on my stove doesn’t distribute the heat very evenly.  However if you do use a griddle and can make multiple pancakes at once it will take less time!

I had leftover cinnamon mixture so I drizzled the remaining over my pancakes. They were good but really sweet. If you aren’t a fan of super sweet, don’t drizzle with more cinnamon mix.  Or you could just try it without and add if you want later.

Recipe adapted from The Recipe Critic’s Cinnamon Roll Pancakes

Cinnamon Roll Pancakes

Serves 6 pancakes
Prep time 15 minutes
Cook time 25 minutes
Total time 40 minutes

Ingredients

pancake mix

  • 1 cup flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1 tablespoon canola or vegetable oil

cinnamon filling

  • 3 tablespoons unsalted butter (melted)
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon

cream cheese glaze

  • 3 tablespoons unsalted butter
  • 2oz cream cheese (room temp)
  • 3/4 cups powdered sugar
  • 1/4 teaspoon vanilla extract

Directions

1. Make pancake batter by mixing dry ingredients thoroughly then mixing in egg, oil and milk until just wet. Set aside until ready to use.
2. For cream cheese glaze, melt butter in a small saucepan, add cream cheese, sugar and vanilla and stir until combined and no longer lumpy. Remove from heat and set aside.
3. Preheat pan over medium-low heat. Mix cinnamon filling ingredients and put mixture in a small (like sandwich sized) bag. Cut tip (3/8" inch) to prepare mixture for drizzling onto pancakes in pan.
4. Spray or use a small amount of butter to grease preheated pan. Add about half cup of pancake batter. Once the mixture just starts to bubble, drizzle cinnamon in a swirl pattern over pancakes. Let sit until another minute then flip and cook an additional 1-2 minutes until golden brown.
5. Once your pancakes are done, serve drizzled with cream cheese glaze and remaining cinnamon mixture, if you desire.
