These chocolate covered bananas only take a few minutes to prepare (plus a half hour to set up in the freezer) and they are a delicious yet healthy treat. You can use any kind of chocolate, bars or chips, and you could also replace the pistachios with some other kind of nut; however I think salted pistachios compliment the chocolate and banana wonderfully.
Adding a tiny bit of oil in with the chocolate helps the it come together smoother and stay in a liquid form longer so you don’t have to work super quickly. It’s also thins the chocolate out a little though, which is why the bananas have a little pool of chocolate around them. This doesn’t bother me because they still taste good! If you want perfect little banana truffles you can try microwaving without the oil, but just be aware it will harden up pretty quickly so you have to work fast.
I photographed these outside and it was so hot out that condensation started forming on the semi-frozen bananas.
Chocolate Covered Banana Slices with Crushed Pitsachios

- 1 sliced banana
- 1oz chocolate
- 1 teaspoon coconut oil (or vegetable oil)
- 1/4 cup pistachios
|1.||Remove the shells from the pistachios and crush them with a rolling pin or a meat tenderizer. Put a piece of parchment paper over a plate.|
|2.||If you're using a chocolate bar, break it into small pieces (or use chips). Put them in a small microwave safe container with the coconut oil. Microwave on high for 25-30 seconds. Remove from the microwave and stir well to ensure chocolate is smooth.|
|3.||Use a toothpick (or fork) to pick up the banana slices and dip them in the chocolate. I let the banana fall of the toothpick then flip it over in the chocolate to cover both sides. Use the toothpick to put the chocolate covered slices slice on the parchment paper. Sprinkle the slices with the crushed pistachios.|
|4.||Put the chocolate covered banana slices in the freezer for about half an hour to set up.|
