My grandma is a great baker, and she makes this amazing chocolate cake with coffee in it. That little bit of coffee flavor gives the chocolate cake an added dimension of delicious. This microwave version is, of course, not the same as my grandma’s cake, but it’s still hits the spot and has that chocolatey coffee goodness.
I decided to add a little powdered sugar to the top of this cake just like my grandma does with her oven version. I think that that little bit of extra sweetness helps counter the slight bitter notes from the cocoa powder and the coffee.
These mug cakes are super easy to throw together, but they can get tough and chewy if you over-mix them after adding the wet ingredients. This recipe, like many you may see, says to “mix until just combined”. What that means is, after you add the wet ingredients, mix it together slowly until you don’t see any clumps of dry ingredients anymore, then stop mixing. Sometimes when I make these mug cakes I get a little flour at the bottom edges of the mug that didn’t get mixed all the way, but its not enough to effect the taste, and better that than chewy cake!

- 3 tablespoons flour
- 2 tablespoons sugar
- 1 tablespoon unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 3/4 tablespoons vegetable oil (or coconut oil)
- 1 tablespoon strong coffee
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- powdered sugar
|1.||Mix the flour, sugar, cocoa powder, and baking powder well. Add the oil, coffee, vanilla and milk and mix until just combined.|
|2.||Cook in microwave for 45-75 seconds, depending on how powerful your microwave is.|
