Chicken with Garlic Lemon Feta Sauce

This recipe is all about the sauce.¬† Here I’ve used it with fried chicken but it also goes well with steak or grilled vegetables.

In the version shown, I fried the chicken in a cast iron skillet. I recommend cooking poultry and meats with cast iron for two reasons: One, it’s healthier because you don’t need extra oil if you have a properly seasoned pan, and Two, it tastes so much better!

Chicken with Garlic Lemon Feta Sauce

Chicken with garlic lemon feta sauce.

Ingredients

  • 1lb boneless skinless chicken breasts
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove minced garlic
  • 2 tablespoons feta cheese (crumbles)
  • 1/3 red onion (sliced)

Directions

1. In a small mixing bowl, combine mayo, lemon juice and garlic. Mix and put bowl in fridge until needed.
2. Preheat the pan at medium high heat (& add oil if necessary). Flatten chicken breasts to about half an inch thickness. Once the pan is hot, add chicken and onion to pan.
3. Flip chicken and onion pieces after about 4 minutes. Continue to cook until chicken is no longer pink in the middle.
4. While still hot, top chicken and onion slices with sauce. Sprinkle with feta.
