Caramel Apple Parfait

You can’t have an apple themed recipe week without bringing up at least one mention of caramel.  This post contains a recipe for cinnamon fried apples and spiced caramel sauce as I think they go splendidly with creamy, not-too sweet greek yogurt.  If you want to save some time though, just use store bought caramel.

If you do decide to try out making your own caramel, you will have plenty left over to save and use again.  Just store it in the fridge then warm it in the microwave for a few seconds the same way you would with store bought sauce.

Above is what the caramelized sugar looked like right before I took it off the heat.  You want it to get a nice deep amber color but not too dark or it will burn.  It goes from light to dark pretty fast so pay attention when it starts to turn.

Caramel Apple Parfait

Serves 2
Prep time 10 minutes
Cook time 30 minutes
Total time 40 minutes

Ingredients

  • plain greek yogurt

spiced caramel sauce

  • 1 cup sugar
  • 1/4 cup water
  • 1 1/2 cup heavy cream (do not substitute)
  • 1 teaspoon ground cinnamon

cinnamon fried apples

  • 2 apples (sliced)
  • 1 tablespoon butter
  • 2 tablespoons packed brown sugar
  • 1/4 teaspoon ground cinnamon

Directions

Spiced Caramel Sauce
1. Combine sugar and water in medium saucepan, bring to boil over medium high heat, stirring until sugar disolves. Once sugar is dissolved, stop stirring. Allow to boil another 5-7 minutes until it turns amber brown. Remove from heat and carefully pour in cream. It will spatter a little and the caramel will solidify. Return to stove and cook over medium to medium-low heat, stirring occasionally until caramel melts and sauce thickens, about another five minutes. Whisk in cinnamon, then pour sauce into a heatproof container.

2. Melt butter over medium-low heat. Add apples and saute for about 10 minutes, then add brown sugar and cinnamon and continue cooking another 5 minutes. Remove from heat.
Make your Parfait!
3. Layer apples, sauce and yogurt in a dish or glass. You will have lots of leftover sauce to store and use again later.
