BBQ Pork Taquitos

After making bbq pulled pork in the slow cooker, I ended up with some leftovers that I wanted to use up in a creative way.  I came across this recipe for baked bbq pork taquitos. At first I was skeptical, bbq tacos didn’t sound that appealing.  After I read the list of ingredients though, I was curious to give them a try.  I’m glad I did because these turned out really well.  The bbq sauce isn’t overpowering and adds just a little tangy sweetness to that traditional taco flavor.

You can use any kind of cooked shredded or diced pork, or even chicken in this recipe.  If you’re like me and your shredded pork has already been mixed with bbq sauce, you can omit the additional bbq sauce from the list of ingredients.

These go really well with ranch dressing.

BBQ Pork Taquitos

Serves 8 taquitos

Cook time 15 minutes
Total time 30 minutes

Ingredients

  • 3oz cream cheese
  • 1/3 cup bbq sauce
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chile powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon brown sugar
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 cup diced onion
  • 2 tablespoons minced cilantro
  • 2 cups shredded pork
  • 1 cup grated sharp cheddar
  • 1-2 tablespoon olive oil
  • 8-10 6-9 inch tortillas

Optional

  • hot sauce

Directions

1. Preheat oven to 400°f. Put foil over a baking sheet.
2. In a medium-large mixing bowl, combine cream cheese, bbq sauce, all of the spices, sugar, cilantro, onion, salt and hot sauce if you're using it. Mix in the pork and cheese.
3. Cover tortillas in a damp paper towel and microwave for 30 seconds. Spoon 2-3 tablespoons of filling in a line on tortillas and then roll them up.
4. Put tortillas seam side down on the baking sheet. Brush them with a little olive oil and sprinkle with a little salt.
5. Bake for 12-15 mintues until they start to brown.
