Baked Cinnamon French Toast

For some reason, I’ve never really been that excited about french toast. I’m sorry if this offends anyone but soggy fried bread just doesn’t do it for me.  However, when I saw a recipe for a baked version at the Pioneer Woman I knew I had to try it out.  I made a half-sized version with slightly different ingredients and I think it turned out fantastic, kind of like a combination of coffee cake and french pancakes.



As I mentioned above, I used an 11×7 pan which is more than enough for my two person household.  You can easily double the ingredients and use a 9 x 13 pan.  You may need to increase cooking time to one hour unless you like it a little gooey.



Baked Cinnamon French Toast

Prep time 15 minutes
Cook time 45 minutes
Total time 1 hour


bread mix

  • 1/2 loaf sourdough or french bread (slightly stale is even better)
  • 4 eggs
  • 1 1/4 cup half & half
  • 1/3 cup sugar
  • 1 tablespoon vanilla extract


  • 1/4 cup flour
  • 1/4 cup packed brown sugar
  • 1/2 - 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 stick cold butter (cut into pieces)


1. Grease 11x7 baking pan. Tear up bread and put in pan. Mix remaining bread ingredients and pour over bread as evenly as possible. Cover and keep in fridge overnight or at least 3 hours.
2. Mix topping ingredients with a pastry cutter or butter knives. Store in bag until ready to use.
3. Preheat oven to 350°f. Add topping to pan. Cook for 45 minutes. Top with butter/maple syrup.
