Baked Chicken Bites with Panko Crumbs

Here is a super simple/easily customizable baked chicken recipe that utilizes panko crumbs for a nice crispy breading.  Just pick a spice – lemon pepper, cajun seasoning, italian seasoning – whatever you have on  hand/ are in the mood for to add to the batter and you have yourself some tasty bites.


Dredging kind of annoys me (especially small pieces) so I avoid that process by putting the crumbs in a bag and then adding the egg-soaked chicken pieces.  Another idea to make life easier is to line your baking sheet with tinfoil for easy clean up.  Just remember to lightly grease the tinfoil with butter or oil.


The egg/crumb breading really helps seal in moisture, making for delicious tender chicken.


Baked Chicken Bites with Panko Crumbs

Total time 25 minutes


  • 1lb boneless skinless chicken breasts (chopped into ~1x2 pieces)
  • 1 cup panko crumbs
  • 1 egg
  • 2 teaspoons spice of your choice (lemon pepper, italian seasoning, cajun seasoning)
  • salt & pepper to taste


1. Preheat oven to 425°f.
2. Put cut up chicken pieces in a mixing bowl, sprinkle about one teaspoon of spice over the chicken and then stir to cover. Crack egg over chicken mixture and stir again.
3. Put panko crumbs in a large plastic bag, add the 2nd teaspon of spice and seal/shake bag. Open bag and place chicken pieces in (don't dump whole bowl because you don't want the excess egg gunking it up). Seal and shake to coat chicken with crumbs.
4. Spread breaded chicken on a lightly greased tray. Bake about 6 minutes and then flip pieces and bake another 6-10 minutes until pieces are golden brown and cooked through.
