This sandwich really capitalizes on the flavor of bacon without wrapping everything in it by frying the pineapple and onion in the bacon grease. It sounds pretty indulgent but because the grease is hot on contact, the fruit and veggies don’t really absorb the grease. The combination of sweet and salty with wonderful textures makes this sandwich very drool worthy.
Bacon is kind of a strangely polarizing food. I feel like the pro-bacon camp loves it because it’s sort of the epitome of anti-diet food, and the bacon haters are probably just sick of hearing about it. No matter your opinion there’s no denying bacon is a very flavorful food that gives any dish it’s in a distinctive taste.
Take caution when frying the pineapple. Because the grease is very hot, and pineapple contains a lot of water, there will be a lot of spattering – so be sure to move quickly and not to linger!
