Here is a snack that meets the golden triad of snack standards (yes I just made that up): it is healthy, it is super easy to make, and it is delicious! Also, bonus points because edamame is pretty cheap.
I would recommend making this with unshelled edamame, even though that’s not what’s pictured. It’s still pretty darn good with shelled edamame, but unshelled (still in the pod) just seems to have a better taste/texture when the edamame is eaten appetizer style like this. I only had shelled on hand so that’s what I made.
If you make the pod version, prepare it the same way; don’t worry the edamame beans will still have all of that garlic-spice-lime goodness.

spicy garlic lime edamame
|Cook time||5 minutes|
- 2/3-1 cups frozen edamame (shelled or unshelled)
- 1/4 teaspoon red pepper flakes
- 1 tablespoon olive oil
- 2 cloves minced garlic
- 1 tablespoon lime juice
- salt to taste
|1.||Bring a small pot of salted water to boil and boil frozen edamame for 4 minutes.|
|2.||After you start boiling the edamame, heat olive oil in a small saucepan over medium. Add the red pepper and garlic and saute for 2 minutes the remove from heat.|
|3.||Drain the edamame and stir in olive oil mixture, then top with lime juice and salt.|
